Miyazaki beef is 100% purebred Japanese Wagyu. The breed of cow used is Kuroge Wagyu, also known as “Japanese Black”. It is one of four Wagyu breeds that exist today. Wagyu Miyazaki is considered one of the best meats that Japan has to offer. The cattle are raised using a special technology and with great attention to develop an incredible taste and marbling. Miyazaki Wagyu is known for its cherry red color, tender texture and great full meaty flavor. The fat is evenly distributed and creates a non-greasy taste. It begins to dissolve at a temperature of 25 degrees Celsius, melting right in the mouth. At a national competition held every 5 years and often referred to as the Olympics of Wagyu Beef, Miyazaki Beef has won first prize 3 times in a row.
Preparation:
Remove the meat from the vacuum pack and blot very well with kitchen paper. Heat the pan
at high temperature. Brush both sides of the steaks with olive oil. Seal the stacks
on each side for 3 to 4 minutes, according to the desired level of doneness. Remove the steak from the pan and
let rest on a wire rack covered with foil for 5 min.
